The moment the temperature climbs past comfortable, the craving hits — something cold, something bright, something that actually tastes like summer rather than artificial flavoring.
The good news is that the best summer drinks don't come from a bottle or a café menu.
They come from a handful of fresh ingredients, five minutes of effort, and a decent amount of ice. Here are five recipes that genuinely deliver, covering everything from a classic lemonade upgrade to a creamy tropical blend that tastes like it should cost twice as much to make.
1. Sparkling Mango Lemonade
Bright, tropical, and fizzy — this one disappears fast at any gathering.
Ingredients (serves 2):
1. 1 large ripe mango, peeled and cubed (about 250g / 9 oz flesh)
2. Juice of 2 large lemons (around 80ml / 3 fl oz)
3. 2 tablespoons honey or simple syrup, adjusted to taste
4. 300ml (10 fl oz) sparkling water, chilled
5. Ice and fresh mint to serve
Step 1 — Blend the base
Blend the mango flesh, lemon juice, and honey together until completely smooth. If the mango is fibrous, strain through a fine mesh sieve for a cleaner texture.
Step 2 — Assemble
Fill two tall glasses with ice. Pour the mango base about halfway up, then top with sparkling water. Stir gently once — you want to preserve the fizz. Garnish with a mint sprig and a lemon slice.
Notes:
1. Use very ripe mangoes — underripe mango produces a sour, flat flavor that no amount of honey will fix
2. Add the sparkling water just before serving, never in advance
2. Strawberry Basil Lemonade
The basil sounds like a strange addition until you try it — then it becomes non-negotiable.
Ingredients (serves 2):
1. 200g (7 oz) fresh strawberries, hulled
2. Juice of 2 lemons
3. 6 fresh basil leaves, plus extra for garnish
4. 2 tablespoons sugar or honey
5. 250ml (8.5 fl oz) cold still water
6. Ice to serve
Step 1 — Muddle the basil
Place the basil leaves and sugar in a jug and press firmly with the back of a spoon for about 30 seconds to release the oils. The sugar acts as an abrasive that helps extract the flavor.
Step 2 — Blend and strain
Blend the strawberries with the lemon juice and water until smooth. Pour over the muddled basil mixture and stir well. Strain if desired, then serve over ice with extra basil leaves.
Notes:
1. Don't blend the basil — heat from blending turns it dark and bitter
2. This lemonade develops more flavor if left in the fridge for 30 minutes before serving
3. Watermelon Mint Cooler
The most hydrating drink on this list — and the easiest to make.
Ingredients (serves 2):
1. 500g (17 oz) seedless watermelon, cubed
2. Juice of 1 lime
3. 8 fresh mint leaves
4. 1 tablespoon honey (optional — ripe watermelon often needs none)
5. Ice to serve
Step 1 — Blend everything
Combine the watermelon, lime juice, mint, and honey in a blender and blend until smooth. Taste and adjust lime or honey as needed.
Step 2 — Serve
Pour directly over ice — no straining needed unless you prefer a completely smooth drink. Garnish with a mint sprig and a thin lime wheel.
Notes:
1. Blend and serve immediately — watermelon juice separates and loses its fresh flavor quickly
2. Freeze leftover juice in ice cube trays for a slushie-style version the next day
4. Coconut Pineapple Agua Fresca
Creamy, tropical, and completely refreshing — no blender required.
Ingredients (serves 2):
1. 200ml (7 fl oz) pure coconut water, chilled
2. 150ml (5 fl oz) fresh pineapple juice (blend and strain fresh pineapple chunks)
3. Juice of half a lime
4. 1 teaspoon honey
5. Ice and pineapple slices to serve
Step 1 — Mix
Combine coconut water, pineapple juice, lime juice, and honey in a jug. Stir until the honey dissolves completely.
Step 2 — Serve
Pour over ice in tall glasses and garnish with a pineapple slice on the rim.
Notes:
1. Use fresh pineapple juice rather than canned — canned pineapple juice has a cooked, flat taste that changes the character of the drink entirely
2. This drink is naturally hydrating and works well before or after outdoor activity
5. Cucumber Ginger Lemonade
Clean, cooling, and slightly spicy — the most sophisticated drink on the list.
Ingredients (serves 2):
1. Half a medium cucumber, peeled and roughly chopped
2. Juice of 2 lemons
3. A 2cm (1 inch) piece of fresh ginger, peeled and grated
4. 2 tablespoons honey or simple syrup
5. 300ml (10 fl oz) cold still water
6. Ice and cucumber slices to serve
Step 1 — Make the base
Blend the cucumber, grated ginger, lemon juice, and honey with half the water until smooth. Strain through a fine mesh sieve — press firmly to extract all the juice from the pulp.
Step 2 — Assemble
Add the remaining water, stir well, and taste. Adjust lemon or honey as needed. Pour over ice and garnish with thin cucumber slices.
Notes:
1. Ginger intensity varies significantly by freshness — start with less and add more to your preference
2. The strained pulp can be used in smoothies or pressed into salad dressings — nothing goes to waste
